JOBS - SOUS CHEF

Stallion is on the hunt for a hands-on, all-round sous chef to join our kitchen crew. We’re a modern Italian eatery, casual but serious about food and hospitality — good produce, honest techniques, great wine, and a team that works hard and has fun doing it.
You’ll be a key part of making the kitchen run smoothly, creatively and reliably.

The Role:

  • Support the Head Chef/Executive Chef in the preparation and execution of the menu: from share plates to mains, with that modern European / Italian-backbone flavour that defines what we do.

  • Oversee station(s) during service: plating, quality control, timing, and flow.

  • Lead by example in the kitchen: mentoring cooks/line staff, ensuring everyone’s pulling in the same direction.

  • Manage kitchen operations: ordering, stock control, ingredient prep, cleanliness, pest/hygiene compliance.

  • Help develop menu items, specials and seasonal features — we like to keep evolving.

  • Be part of the culture: the kitchen is high energy, collaborative, no nonsense, but always with good vibes.

We’re after someone who:

  • Has relevant sous chef or experienced cook/chef de partie experience in a fast paced restaurant environment (fine dining, high-volume, share plates or modern cuisine)

  • Lives and breathes quality produce, Italian techniques (and a willingness to embrace a modern European twist)

  • Can handle pressure, lead a team, keep standards up even when it’s busy

  • Is a strong communicator, dependable, and proactive (“get it done” mindset)

  • Loves to innovate but respects the fundamentals

  • Based in or willing to relocate/commute to Mansfield, and comfortable with the roster (evenings, weekends as required)
